Personally I think you guys go to way to much effort and thought about this whole composting toilet thing, my answer is VERY CHEAP and VERY SIMPLE and no messing about and I Guarantee it will work with no smell what so ever in the boat.
I use a normal porta potti, I use one (1) cup of Napisan (or home brand equivalent) with about 1/2 gallon of water in the bottom tank, and about 1/2 cup of Napisan when filling the top filler tank. I have never had ANY smell, even when left for 6 months (whoops I forgot to empty it) with both Number 1's and 2's in the bottom holding tank.
To empty, I just unclip the top tank and take the bottom tank into a toilet and empty it, it wont break down the waste (but then again the composting thing seems not to by the reports on here) but it works a treat.
No putting number 2's in bags or adding moss or any thing like that, just simple and it works. If you want to know why thats simple too, Napisan is a anaerobic powder, the oxygen breaks down the bacteria that causes the smell, no bacteria, no smell.
AND as everything on the boat should have at least 2 uses, Napisan does a brilliant job of cleaning the deck

I installed a Nature's Head in my 26M before going to the North Channel (Lake Huron) in 2012 and have nothing but good to say about it. I have paperwork proving that it's approved in the U.S. and Canada; both the USCG and the Canadian affiliate have them on some of their smaller vessels. I charge it in the Spring and empty it in the Fall. The peat has no adverse odor at all. I don't use the fan, just use the airflow over the vent, which works fine with the boat on a mooring buoy.

Just a question of whether Lake Champlain allows isolated portapotties…
We are planning a trip to Lake Champlain this summer.
From what we could find online it would appear that a isolated self storing portapottie is acceptable.
