Towing behind a 26M

We bought our
largely to have a sail boat that allows a rapid return to the ramp at no-notice due to certain medical conditions. Going full steam ahead care of 60 horses is useful when required, but definitely isn't our preferred mode of travel. HOWEVER! Our adult children are more taken with the notion of being dragged around by burning dinosaurs rather than sailing care of solar energy. The question is whether many of you fellow Mac-ers use the Mac's towing capacity.
We were looking at some of those inflatable devices that can be towed, but I'm just not sure how effective they'd be. While Mr Mac sells his boats saying that they can tow a water skier, I think it'd be a fairly slow-ish ride and a wake-board probably wouldn't get onto the plane.
Any thoughts, comments, suggestions?
