Thanks for that but part of the problem is that I did google for sails, there are a lot of options. I'll sail this 21 on inland water only, I don't see getting her to the coast. Light to moderate is probably accurate, as we don't have steady winds over 20-25mph. I'd sail them if we had them, but it'd be very seldom.
I certainly don't want junk but we're not chasing for the cup either. I'll look for something midrange, I agree on battens, and will likely go with a main and a jib first, genoa later. It seems Dacron is a typical choice, what about a sail cloth weight?
I suppose I could ask the sales person, but would like to have a small clue going in.
Thanks for the help. Flat.

I had very good luck with
Sail Rite when I needed a custom set for my Holder-14. Very easy to work with and quality work. Seemed like a fair price at the time. I see that they still list the Venture-21. YMMV

3 1/2 oz is a lightweight cloth and is the 'stock' Doyle material. I have never seen it called 'Dacron (tm)' since that is a trademarked name for a tightly quality controlled material as opposed to leftovers. We have both Doyle OEM sails in our shop as well as Dacron (tm) sails and they are different.
I believe you are in the desert, so UV might be a bigger danger to your sails than getting blown out. Of course, UV treatment costs an appreciable fraction of the sail, so it might be better to just get a sail cover.
We carry C2000, C3000 and Pentex sails of course.
EM if you are interested please.
