If you want to try a cross channel in Mac company, there will be the annual Rye to Boulogne event at August BH by the UKMOA. Best way to do it is to trail boat to Rye and back, and then its only about 25-30 miles each way across channel.
Many Mac owners based on the Solent have done Solent to Cherbourg run (about 70 nm each way) and we have some members who have done Salcombe/Channel Islands and Falmouth/Scillies.
As with any "offshore" run the watch word is always weather, weather, weather but a 50hp motor does help widen the weather window.
I have done Cherbourg sailing, a number of times but not on a Mac. My preference would be to use the Mac motor to get over, as sailing over takes forever, so motor sailing or just motoring is preferable to me.
Personally I would only do a long off shore run with at least three experienced sailing folks on board because you really need to do watch keeping for safety. Also all the safety stuff you mentioned is a must.
When we get the new UKMOA web site sorted out, you should be able to get a lot more localised advice regarding North Sea and Channel waters.
