Well Currie, at 5'10" standing room is a non-issue, you should have no problems between the daggerboard trunk and companionway ladder. As for the galley on the earlier M models there has been plenty of debate in old old threads and I said then and will say it again, there are no problems associated with the stove beside the starboard settee unless you are a total "AWK" or "ZEEK", I have used it many times with the same ease as my kitchen stove in my house. Any perceived problems are manifested in the imagination and can easily be resolved through reality practice. In practice you will likely do most cooking in the cockpit.
I installed an origo 1 burner stove in, works quite well on our 04 interior. No issues cooking. Quite easy and no issue. We use the cockpit mounted grill 80% of the time anyway. But the 03/04 galley is not a downside by any means, IMO.
Now with 2 M interiors, plus the X...there are going to be 3 different camp! Early M'ers, Late M'ers, and X'ers... all prefering their layout (I am no different, I prefer our 04 layout better than the late M or X). I am sure a lot has to do with what you get used to.
Generally when new people (or X owners) come on our boat for the first time..usually the first word out is 'Wow! look at all this space!' Moving the head and having a built in galley will do that. But at the cost of a smaller head space (which is good IMO), and less room to prepare food (I try and keep it simple anyway), and no permanent fixed huge table (fine with me, I built a small add on table, use it when we need it). Not that the 03/4 interior is superior, but just works for us.
I am sure if I had an X or later M, I would feel THOSE interiors were superior!
