In the picture you will see 2 "plugs" which give access to the bolts for the winch and the cam cleat. I am going to be moving the cam cleat so will need to get more of these plugs. I guess I am searching for the wrong thing as I wasn't able to find them on google.
So what is the proper way to get to the backside of the desk fitting like this winch and cam cleat? Is there something else available?

Yup BWY carries them, you can also get them at lowes they typically stock the smaller ones. They are typically called plastic hole plugs and available in white or black. They are identical to the ones used in the interior on my . As far as access goes, I do not have any holes in the outside of my boat, I have accessed everything by cutting holes in the interior of the boat and making nice close out panels of wood or in some cases fibre glass and finish like new (takes a bit more work, to blend and hide the repair)
I used deck plates they are water tight come in 3" dia. & up just screw off the lid & u have access these plastic plugs are prone to getting pulled out & they are not water tight
